About Bailey's Bayou 

The Owner

Our founder James Claude Bailey was born and raised in New Orleans, Louisiana where he began his cooking career at age 12. He has been an adult culinary specialist for more than 30 years. He trained in the US Navy and Johnson and Wales University in Norfolk, Virginia. 


Our mission is to give our takeout customers a "flavor advantage". 


Most people want to spice up their life and we have the recipe to get it done. 


Our Authentic Cajun and Creole dishes consists of cajun seasonings, a strongly-flavored stock, meat or shellfish, roux , okra , filé powder and what Louisianians call the "Holy Trinity" of vegetables, namely celery, bell peppers, and onions. 


While most only offer cajun and creole dishes as an afterthought on their menus we focus primarily on authentic New Orleans cuisine. 


Our sole focus on cajun and creole dishes is what gives our customers a flavor advantage.
